Ingredients

  • 6 cups water

  • 2 tablespoons chopped fresh Ginger

  • 3 (2x2 inch) strips Kombu

  • 10 medium Shitake mushrooms

  • 4 Scallions, thinly sliced

Directions

  • Combine the 6 cups water with the kombu in a large saucepan and bring to a boil, then simmer for 1 hour. Strain the mixture through a fine-mesh strainer or cheesecloth into a bowl. Discard the kombu pieces but reserve the liquid.
  • Add the ginger to the liquid and simmer for 10 minutes.
  • Stir in the reserved mushrooms and scallions.
  • Serve the broth in cups and enjoy.
