Mushroom, Ginger, and Scallion Broth

6 cups water
2 tablespoons chopped fresh Ginger
3 (2x2 inch) strips Kombu
10 medium Shitake mushrooms
4 Scallions, thinly sliced
Directions
- Combine the 6 cups water with the kombu in a large saucepan and bring to a boil, then simmer for 1 hour. Strain the mixture through a fine-mesh strainer or cheesecloth into a bowl. Discard the kombu pieces but reserve the liquid.
- Add the ginger to the liquid and simmer for 10 minutes.
- Stir in the reserved mushrooms and scallions.
- Serve the broth in cups and enjoy.
